Iceland has many lakes, rivers and as an island, is surrounded by sea. There is even a river in the middle of Reykjavik city, where you can canoe / kayak down if there is rain. In recent years water sports have been gaining more popularity in Iceland and with more and more tourists coming, so are opportunities for renting equipment for these kind of sports. The kayak club of Iceland has an excellent information brochure on their website with photos of rivers as well as maps showing where they are located. Here is the brochure(20 mb in .pdf format) and here is their website, where you can register on their forum if you like. Some members of their club have posted videos on this youtube channel and as you can see kayaking on some of these rivers can not be defined in other way then as an extreme sport. If you do decide to go kayaking or rafting on rivers in Iceland, please do study them first, we wouldn't want you to start kayaking as an amateur on let's say... Jokulsa a Fjollum, later arriving at Dettifoss, the most powerful waterfall in Europe.
It is hard to give you information about canoe, kayak and sea kayaking rentals, since many of them don't have websites and many of them move around the country with their kayaks and rent them out in different villages. But we managed to find some rentals that have websites and listed them below, and below that we list tour operators offering guided tours with some kind of water sport activity.
